Instructions
- 1
Gather all your ingredients. If your pre-cooked pork neck isn't already shredded, use two forks to pull the meat apart into shreds. Set the shredded pork aside in a bowl.
- 2
In a separate small bowl, combine the mayonnaise and chopped chilli. Stir them together until the chilli is evenly distributed throughout the mayo.
- 3
Add the cream cheese and smooth cottage cheese to the mayo-chilli mixture. Mix everything together until you have a smooth, creamy spread.
- 4
Take your two slices of bread. Spread the creamy mixture generously on one side of each slice.
- 5
Layer the shredded pork evenly onto the spread on one of the bread slices.
- 6
Slice the pickled cucumbers into rounds and arrange them on top of the pork layer.
- 7
Place the other slice of bread on top, spread-side down, to complete the sandwich. If you have a sandwich toaster or a panini press, warm it up and toast the sandwich for about 2-3 minutes per side until golden and heated through. If not, you can enjoy it as a fresh, cold sandwich.
